Quick answer

Automatic sealers detect when the vacuum is reached and seal with one button — simple and consistent for everyday foods. Manual controls (pulse, manual seal, adjustable vacuum and seal time) let you stop before delicate foods are crushed and fine-tune seals for moist foods. Most good home sealers combine an automatic mode with at least a pulse button.

What “automatic” means

An automatic sealer runs the whole cycle for you: it pulls air until it reaches its set vacuum level, then heats the seal bar for a preset time. You place the bag, close the lid and press one button. Most home external sealers, including the FoodSaver VS2150, work this way.

  • Pros: simple, fast, consistent for meat, leftovers and frozen foods.
  • Cons: full vacuum can crush bread, berries, chips and fish; less control for moist foods.

What “manual” controls mean

  • Pulse — vacuum only while you hold or press, so you can stop at the right moment.
  • Manual seal / seal only — seal immediately, e.g. to make bags from rolls or reseal snack bags.
  • Adjustable vacuum level — choose how much air to remove (the VacMaster PRO380 offers presets and adjustment).
  • Adjustable seal time — longer for thicker or moist bags.
  • Gentle/Normal pressure — a softer vacuum for delicate foods (Nesco VS-12).

Which do you need?

  • Mostly meat, leftovers and frozen portions: automatic is enough.
  • Bread, berries, chips, fish or sous vide with marinades: get pulse or a gentle mode.
  • Bulk processing or varied bag thicknesses: adjustable vacuum and seal time.
  • Liquids: neither — choose a chamber sealer, which offers adjustable vacuum and seal times by design.

Frequently asked questions

What is pulse on a vacuum sealer?

Pulse lets you run the vacuum in short bursts or only while you press the button, so you can stop before soft foods are crushed and then press Seal.

Are manual vacuum sealers better?

Not better, just more flexible. Automatic mode is faster for everyday sealing; manual controls help with delicate or moist foods. The best home sealers offer both.
